Junk food triggers allergies and causes leaky gut

Studies reveal modern food processing techniques and additives cause food to become more allergenic and create or contribute to intestinal permeability (“leaky gut”) and generalised inflammation involving histamine, mast cells and more. In particular, the browning of foods (or caramelisation) can cause mast cell activation. Intestinal permeability/leaky gut is believed to cause allergies, weight problems and heart issues. Citations for all statements at the end of the post. 

Having to rehash my diet does and don’ts to people I go out for dinner with has become easy enough (I’ll eat anything that’s fresh), but I’ve had my family with me for a week and explaining it all to them has been interesting.

It all boiled down to one statement:

“I don’t eat processed foods.”

This could mean different things depending on who you ask. To me, it’s saying no to food that’s been messed with in a structural way by machine processing, and any foods treated with additives of any kind, including so called “natural” flavours, additives and colours, because in my mind, those are still foods not in their original state.

A number of my scientifically minded (generally sceptic) friends chastise me, saying there’s no research to back this up. I’ve never specifically looked for any because I likes what I likes and it’s nothing to do with the science. But a few studies caught my attention when working on another post that happen to explain why processed foods are a poor choice if dealing with, or trying to prevent, inflammation.

And at the end of the day, histamine and mast cells = inflammation.

So moderating our intake of high histamine foods and mast cell triggering chemicals and cosmetics is great, but I’ve found that fighting inflammation overall, rather than just focusing on histamine, has yielded the best results.

It might account for why I am once again able to eat most high histamine foods.

The first study I came across proposes a link between intestinal permeability (leaky gut) and food processing, specifically due to lipid glycation – which is what happens when sugars are cooked with proteins or fats. Glycation is that really lovely brown crust you get when barbecuing meat or roasting vegetables with a nice honey marinade. Tasty through they turn out to be, advanced glycation and glycation endoproducts (AGEs) can contribute to the formation of acrylamide, a potential carcinogen. It’s now believed that glycation is a strong contributor to inflammation. Food manufacturers regularly add AGEs to foods as flavour and colour enhancers. Alzheimer’s, cardiovascular disease, cancer, peripheral neuropathy, and age related deafness are all linked to AGEs.

That’s not the worst of it, according to the study authors, strongly roasting peanuts “typically increases” their allergenicity because glycation increases white blood cell reactions to food allergens. And this is where it gets crazy – “When compared with raw food antigens, IgE antibodies were elevated four-fold against processed food antigens in 30% of humans.”

But more specifically, AGEs induce mast cell activated inflammation specifically, which in turn causes an increase in AGE formation, which then activates more mast cells. Exposure of intestinal cells to glycation products increases interleukin 6 and 8 formation (from mast cells).

The next that caught my attention found that food emulsifiers, the stuff manufacturers add to make things creamier by properly mixing oil and water based ingredients together, leads to a “dramatic increase in a gut marker of inflammation”. Mice treated with emulsifiers, a class of food additive that includes carrageenan, xanthan gum and lecithin (all of which are found in “natural” products), not only developed gut inflammation, they also showed signs of metabolic syndrome (obesity, high blood sugar and insulin resistance). The study showed that these food additives affect gut bacteria in animal studies, with an earlier study revealed that emulsifiers promote the development of inflammatory bowel disease in genetically predisposed mice. Human testing is planned next.

The study authors advise that though emulsifiers are listed on food labels, the additives have varying names, and the best way to avoid eating them is to not eat processed food.

Food additives are also believed to trigger ADHD-like behaviour in children lacking the histamine-degrading HNMT enzyme. You can read my post on that here.

Key points in protecting the intestinal barrier from glycation

High fat meals have the highest AGE content.

Broil and frying generate more glycation than roasting, but boiling is best (I don’t know about you but a boiled steak doesn’t much appeal to me though!).

Cooking your meal at low temperatures may help with post-meal leptin concentrations (the stuff that makes you feel full and interacts with insulin).

Soda and soy sauce (the latter is high histamine anyway) have high AGE content.

Tea and coffee are high in AGEs (I’ll be making my holy basil tea with cooler water from now on).

Potentially beneficial supplements

Please remember, supplements have side effects and you must check with a doctor before adding anything new, even if it’s supposed to be good for mast cells/histamine. 

Quercetin: has been shown to prevent glycation formation in the body.

Curcumin: the active constituent of turmeric may prevent the intestinal damage from processed foods.

Glutamine: has long been touted as a treatment for “leaky gut”. I advise caution with all amines for those who are histamine sensitive…

Pre-biotics: a small study found that a ten gram pre-biotic inulin/oligofructose supplement may reduce intestinal permeability.

Interestingly my niece has been experiencing some inflammation and lip tingling after eating certain foods. When asked how she should resolve it, I wracked my brain trying to come up with an easy to implement solution a 21 year old would stick to.

And it was: “Stop eating junk foods.”

She did, and just two days later the symptoms disappeared and didn’t come back, till she ate some really crappy food. The junk foods had nothing in common on the surface, but I didn’t dig too deep. I truly believe that in some cases it’s enough to simply eliminate processed foods to deal with excess inflammation.

High histamine foods of little nutritional value

Include

Foods with anti-inflammatory and antihistamine foods (six page list in the Anti-Cookbook)

Yoga and meditation to fight inflammation

Higher histamine foods with healing properties (avocado, mushrooms, tomatoes and others)

    Haha, boiled steak doesn’t much appeal to me either! However I’ve regularly been boiling chicken and always boil/steam meat in my pressure cooker.

    I guess it’d be a good idea to be wary of hot drinks too, I always felt it was counter intuitive to use a kettle.

    High fat foods have the highest AGE? Really? Butter, coconut oil, lard, duck fat…those are high AGE foods? I have a hard time believing that. So many people I know have overcome so many health issues using a high fat keto diet.

    I had never considered before that Glutamine might be a problem if you had slow DAO enzyme activity. I have taken loads of it over the years to heal my leaky gut!

    High fat foods such as meats that have high fat content in them. Coconut oil, and grapeseed oil, and those types of oils are good for you, even butter is good for you. A keto diet is specific for certain issues. And the fats they eat, are not usually stuffed in meats. All fats are not created equal, and the main part of that is frying or broiling foods, that changes the fat to something our bodies don’t handle well.

    I thought, as is mentioned at the start of the post, that glycation occurs when sugars are cooked with fat (or protein?). So, a keto diet would not be cooking the meat with extra sugar, and would probably not create so many AGEs.

    I make sure I eat the skin. Some may have issues with it, never seemed to bother me. Could be the source of your chicken too. Do you get pastured ckicken?

    I don’t quite understand why hot drinks would be a problem. They are not necessarily high fat and are not cooking fats and sugars together are they? I’ve been making ginger tea with fresh ginger simmered in hot water so will that be problematic? Also I sometimes make dandelion tea. I don’t really get this.

    On a keto diet the bodies metabolism of fats changes anyway, they are utilised for fuel rather than stored, maybe they aren’t so damaging this way. Also I’ve heard that a Ketogenic diet increases the bodies natural antioxidant pathways.

    AGEs are formed when proteins or lipids become glycated as a result of exposure to sugars. Here is a resource from NIH about foods containing AGEs and how to reduce them in your diet. http://www.ncbi.nlm.nih.gov/pmc/articles/PMC3704564/

    Based on the evidence, I don’t believe that plain tea is a source of AGEs; in fact, tea would help buffer the damage from AGEs, theoretically. I know there is ACRYLAMIDE in coffee as a result of the maillard effect from roasting (from sugars and amino acids being heated above 248° F/120° C). Maybe you could help clarify what you meant, or share your resource as to how you found that AGEs would be in tea.

    Fried foods definitely increase my inflammation, I get acne, rashes and cognitve symptoms. So I eat most of my meat steamed or boiled. But eating a high fat diet is very beneficial for me. I don´t do well with sucrose and fructose. But I always thought that eating a food you are allergic to not raw but boiled would denature the proteins so that you tolerate it better? It was this way with me with nuts and with a friend with carrots. And I´m still still wondering if lecitin is good or bad? I think they use it in liposomal supplements? I´m still not sure whether I should try them or not. L-Glutamin definitely helps me, with supplements (glutathion seems to be key), lifestyle and diet I´m almost symptomfree (now it´s my own choice) for the first time in my life (after 29 years!). Thanks for that article. Even though common sense should tell you to JERF but sometimes we need to be told about it from someone in a white coat and a phd.

    You know, I’ve noticed that even with herbal medicinal teas I feel like vomiting if I drink them hot to warm, but if I let them cool off after steeping them I don’t have tha feeling. I also noticed that eating any food while it’s still hot makes me feel sick. If I let it cool off its ok. I’d assumed that the heat was causing mast cell degranulation as a protective measure in my esophagus and body. I’m wondering how they did the studies, whether they’d put a scope in and people drank these things hot or …. I’m going to go read the studies now as this is very interesting indeed and may explain why the tea is lumped in with the coffee. I have friends who drink these things at scalding temperatures. I also wonder about the mycotoxins involved in all the afore mentioned foods and beverages. As many are on an anti mold diet.     “I dont eat processed foods” yeah i figured that out a while back but very good info aggain Yasmina, if they need humans for testing… i can show a reaction on any thickening agents within 30 minutes, i first thought it was only gelitine from pigfat, but as time went by i found that even the natural/plant thickeners cause a reaction.

    Now if i need to thicken a sauce or gravy i use corn starch its one of the few things i can use..

    I stopped drinking any forms of Coffee & see Headaches now non existent its true unless foods are fresh they should not be eaten…In all the time you have been Sick have you ever been tested for any forms of Lyme disease plus the co infections such as

    baesiosis, anapalsmosis, bartonella mycoplsma etc etc I am now seeing countless people with these conditions of histamine intolerance finding out they have persistent infections some even state Sick from vaccines adjuvents or even certain classes of

    antibiotics tripped their illness off…In a study now coming out of Japan 100% of 41 patients tested have a condition called chronic severe epi-pharyngitis they were all treated with nasal throat swabs of a zinc solution the researchers link their illness to

    vaccine ajduvent…I am also hearing some people fully 100% recover with 3.5 to 4 Grams of Pure 100% Vitamin C at 4 months of daily doses broken up with foods I know one thing for certain the Vitamin C is the only molecule that corrects Collagen

    so maybe Collagen is playing a major factor in histamine intolerance issues or these conditions are linked to Cancer not properly being diagnosed even aloe vera is high in Vitamin C content so are certain mushrooms as well…I am now on the Vitamin C

    daily & foods high in Vitamin C it also could be increasing acid content in the gut as well…
