Juicy Antihistamine Veggie Burgers

Like I always say, being healthy doesn’t mean being chained to your kitchen…I regularly make a great antihistaminic and anti-inflammatory breakfast and lunch in just 10 minutes!

How to do it? I make myself a green juice, juicing the veggies first, because I’m so not into sweet burgers, then scoop them out and into a bowl. I add a chopped antihistamine quercetin rich red onion, loads of fresh histamine lowering, anti-inflammatory thyme, oregano, parsley (and more!). I then crack in a duck egg or two for the Vitamin B12 (130% RDA) and cook quickly in a lightly oiled pan. You can use some soaked flax or chia seeds if you prefer not to use eggs.

I know it’s not ideal cooking ahead of time, but most of us don’t have the luxury of cooking from home every single day. I’ll generally eat foods that have been cooked hours before, as long as I’m not in a hot climate. You can of course refrigerate the juiced veggies till you’re ready to cook lunch.

The Recipe (more or less)

Juice

1 head broccoli

1 fennel

1 bag red and green curly kale

1 tbsp fresh turmeric

2 apples

1 red onion, chopped

Thyme

Oregano

Parsley

 Benefits

Broccoli: anti-carcinogenic, prevents gastric mucosal damage (suggesting potential H2 receptor antagonism).

Kale: is highly anti-inflammatory and has cancer prevention potential.

Fennel: anti-inflammatory, antihistamine, analgesic and antioxidant.

Red onion: is one of the richest sources of histamine lowering quercetin.

Apples: rich in histamine lowering quercetin and inhibit the development of allergies.

Turmeric: inhibits anaphylactic shock, stabilises mast cells and prevents histamine release. It’s also anti-inflammatory and anti-tumour.

Preparation

Juice everything but the apples.

Scoop out the roughage and add to a bowl.

Mix in the onions and herbs.

Crack in the duck eggs if using, or soak 1-2 tbsp ground flax or chia and allow to gelatinise.

Heat a little oil in a pan and cook as veggie burgers.

Meanwhile, juice the apple into the veggies.

Hit the road!

    Hi there, I use duck eggs because two of them provide 130% of RDA Vitamin B12. I eat with purpose and chicken eggs don’t have as many nutrients that I’m in need of. They also have more yolk than chicken – the egg whites are what normally cause allergic/histamine issues, so less of that in the duck eggs.

    Where would I find organic duck eggs? The only thing I can find are pastured-raised chicken eggs

    Hi Yasmina, this question may seem silly (or stem from the fact that I’m not a very good cook and need very exact directions), but did you really take all the “leavings” from the juicing and make a burger with them? I ask because the photo in the bowl with the egg looks so much nicer than what my roughage looks like after the juicer is done with it. I assume you took regular pieces of kale and broccoli for the beauty of the picture and that’s not really what your roughage looks like? Also, how long do you soak the chia seeds?

    Hi Ellen! I buy pretty veggies…I used a bag of mixed purple and green curly kale – you can see some of the beautiful flowers still in the bowl, a bag of mixed purple sprouting broccoli and green, and I had already mixed in the red/purple onion at this point. Took the photo at golden hour to really bring out the colours. I’d estimate (and I’m keeping track), that I spend half of my monthly living budget on food! I also sometimes request that the grocery dept at Whole Foods bring in some beautiful items just for me because I’m taking photos…they’re so sweet there! Keep in mind, I’m a photographer, so I put a lot of time and effort into choosing veg, styling the photo and staging it. And yes, absolutely, those are my leavings! I never photograph anything that’s not what I say it is – the ex journalist in me won’t allow it 🙂

I think I was just so surprised because whatever comes out of my juicer looks so different (i.e. not as pretty), so I was doubting myself whether I understood the recipe correctly or not. Thank you for clarifying and for the recipe too! I’ve loved the juice so far, now I’ll try making the veggies burgers too. 🙂

    Hi Yasmina, im sorry Im confused, so you jiuce the ingredients (is that like a juicer? can I use a blender?) then what do you do with the apples and is that juice at the end to drink? and you use the rougher parts for the burger scooped out of the blender? sorry to ask so much Im just starting out and need advice!!
